Tour Gastronomique de France

Celebrating the Tour de France at Soutine
This July, our seasonally changing Prix Fixe menu pays homage to Soutine’s French culinary heritage whilst nodding to the national sporting celebration. Tour Gastronomique de France, takes your taste buds on a regional journey, showcasing classic dishes along the route of the Tour de France.
Think Moules Marinière with garlic cream and frites inspired by the much-loved dish in Lille Métropole to Croissant and Chocolate Perdu from the pastry capital of the country, Paris. Explore traditional flavour with a Soutine twist, all carefully curated by Head Chef Ken, read below for where his inspiration sparked throughout the menu.
Pour l’entrée
Fourme D’ Ambert, Chicory and Granny Smith Apple Salad
Exploring central France, this classic starter uses cheese from Ennezat paired with the bite of crisp and tart Granny Smith apples. Served on a bed of chicory, a popular French salad leaf and topped with pickled walnuts and a honey mustard dressing.
Heritage Tomato and Goat’s Curd Croustade
Tomatoes grown in Provence, particularly heirloom varieties, are known for their exceptional flavour and quality and are often celebrated for their rich, sweet, and slightly acidic taste. This dish combines crispy puff pastry, with semi-dried heritage tomatoes, whipped goat’s curd topped with a fresh basil and garlic dressing.
Provençal Seafood Soup
As the race heads down to the South of France, the increase in seafood dishes, utilising orange, fennel and saffron flavours grows more prevalent. As one of the most classic dishes you can find in the region, we serve this with croutons and top with gruyère cheese and a parsley garlic dressing.
Pour le principal
Smoked Toulouse Sausage
Following the tour down through the Pyrenees town of Hautacam and Toulouse, this dish take inspiration from the mountainous love of pork and cheese. Toulouse sausages are known for their richly spiced flavours and makes for a delicious combination when served alongside a cheese and garlic mashed potato.
Roasted Aubergine with Ratatouille du Mont Ventroux
As the cyclist’s head over the steep terrain of Mont Ventoux, we look to offer a softer dish to oppose the treacherous mountain range. Since the 18th century, ratatouille has been a highlight of the area. In this dish we offer roasted aubergine as a base to this hearty stew topped with black olive tapenade, crispy capers and basil.
Moules Marinière
Although considered Belgium’s national dish, this well-loved staple weaves its way into Northern France traditions. With the tour beginning in Lille, in the north of France, we couldn’t not include this dish. Served in a creamy garlic sauce alongside frites, this dish on a summer’s day is a dream come true.
Pour Finir
Camembert De Normandie
Moving onto after dinner, without getting sweet just yet, we have a French classic, widely known across the UK. The Camembert – the most famous French Cheese produced in Normandie – is a mould ripened cheese. This powerful taste with intense earthy and mushroom flavours gives for a delicious melt-in-the-mouth finish to the meal.
Macaron de Saison
A French classic, and staple to any patisserie shop in France, the macaron has come a long way from the simple almond meringue cookie it once was when introduced to France in the 16th century. Covering many regions over the country
Croissant and Chocolate Perdu
Considered the capital of croissants, the race comes to an end in Paris. What better way to finish your meal with warm bread and butter pudding made from rich chocolate and flaky croissants.
